Easy Gazpacho Novice / Beginner

This traditional Spanish soup really packs a zing and is truly easy to toss together. It will help you pack in Vitamins A and C as well as Potassium. Cold soups are a staple of summer, but can be served year-round.

Ingredients

1 (28 ounce) can Tuttorosso® Italian Style Peeled Plum Shaped Tomatoes in tomato juice, finely chopped
1/2 cup finely chopped green bell pepper
1/2 cup finely chopped celery
1/2 cup finely chopped cucumber
1/4 cup finely chopped onion
2 teaspoons chopped fresh parsley
1   garlic clove, minced
2 tablespoons wine vinegar
2 tablespoons extra virgin olive oil
  Salt and black pepper to taste
1/2 teaspoon Worcestershire sauce
2 cups tomato juice

Directions:

  • Combine all ingredients, cover and refrigerate for 2 hours
