Con Queso Chili Rice

1   (5 ounce) package   Spanish rice mix
3   cups   shredded cheddar and Monterey Jack cheese blend
1   (15.5 ounce) can   Red Gold® Chili Hot Beans in Chili Gravy
1   (14.5 ounce) can   Red Gold® Diced Tomatoes Chili Ready
1   cup   water
  • Preheat oven to 425o F. Coat 1 ½ quart casserole with cooking spray. Mix together rice mix and 1 cup cheese in the casserole dish. Mix the RED GOLD® CHILI HOT BEANS in CHILI GRAVY, RED GOLD® DICED TOMATOES CHILI READY and water in saucepan.
  • Heat to boiling and pour over the rice mixture in the casserole; stir to mix. Cover casserole and bake for 20 minutes. Then remove cover and put remaining cheese on top of casserole. Bake an additional 5 minutes or until cheese is melted and rice is tender.
