Tomato Pancakes Novice / Beginner

Ingredients

4 eggs , separated
1 cup low fat sour cream
1/2 cup low fat cream cheese
1/2 cup Red Gold® Crushed Tomatoes, drained
1 cup flour
1 tablespoon sugar
1/4 teaspoon salt
1 tablespoon vegetable oil

Directions:

  • In a mixing bowl combine the egg yolks and sour cream. Stir in the cottage cheese, RED GOLD® CRUSHED TOMATOES, flour, sugar and salt.
  • In a mixing bowl beat the egg whites until stiff. Fold into the egg yoke mixture. Bake on hot, lightly oiled, griddle. Turn once and serve.
