Ingredients

2 cups rotini pasta
1 cup pea pods, cut into 1 inch pieces
2 (10 ounce) cans preminum breast of chicken, drained and flaked
1 (5 ounce) can sliced water chestnuts
1 small red bell pepper, cut into 1 inch pieces
1/2 cup chopped red onion
1/2 cup shredded carrots
1 (14.5 ounce) can Red Gold® Petite Diced Tomatoes, drained
or 1 (14.5 ounce) can Red Gold® Petite Diced Tomatoes with Garlic & Olive Oil, drained
1 (14.5 ounce) can Redpack® Petite Diced Tomatoes, drained
or 1 (14.5 ounce) can Redpack® Petite Diced Tomatoes with Garlic & Olive Oil, drained
2/3 cup low fat mayonnaise
1/3 cup brown sugar
1 tablespoon cider vinegar
Salt and black pepper to taste
1/2 cup roasted cashews

Directions:

  • Prepare the pasta according to package directions, adding pea pods during last 2 minutes of cooking. Drain and cool pasta and pea pods.
  • In a large bowl combine the pasta, pea pods, chicken, water chestnuts, bell pepper, red onion, carrots and RED GOLD® PETITE DICED TOMATOES.
  • Combine the mayonnaise, brown sugar, vinegar, salt and black pepper; toss with salad. Refrigerate for several hours or overnight. Just before serving fold in the cashews.
