Huevos Ranchero Biscuits Novice / Beginner

Ingredients

1 (16 ounce) can refrigerator biscuits
8 eggs
1/2 cup milk
Salt and black pepper to taste
1 (14.5 ounce) can Red Gold® Petite Diced Tomatoes with Green Chilies, drained
or 1 (14.5 ounce) can Red Gold® Petite Diced Tomatoes Mexican Fiesta, drained
1 cup (4 ounces) shredded Monterey Jack cheese
1/2 cup Red Gold® Salsa Mild

Directions:

  • Preheat oven to 350oF. Bake the biscuits according to package directions. In large bowl combine eggs, milk, salt and black pepper; beat until well blended. Add RED GOLD® PETITE DICED TOMATOES with GREEN CHILIES and mix well.
  • Spray a 12-inch skillet with cooking spray. Heat the skillet until hot over medium heat. Add the egg mixture and cook until set, 4 to 5 minutes. Add cheese and stir gently. Cover skillet and remove from heat. Allow to stand for 2 minutes to melt cheese and set eggs. Place split biscuits on serving plate. Spoon the egg mixture over biscuit and top with warm RED GOLD® SALSA.
