An exciting, cool and refreshing side salad that goes great with grilled meat. Fantastic for get-togethers. It's also really quick and easy to prepare...no cooking needed!

Ingredients

1 (14.5 ounce) can whole kernel corn, drained
1 (14.5 ounce) can Red Gold® Petite Diced Tomatoes with Sweet Onions, drained
1 (14.5 ounce) can Redpack® Petite Diced Tomatoes with Sweet Onions, drained
3 green onions, thinly sliced
1/3 cup chopped fresh cilantro
2 limes, juiced
1/3 cup rice vinegar
Kosher salt to taste

Directions:

  • In a large bowl combine corn, RED GOLD® PETITE DICED TOMATOES with SWEET ONION, green onion and cilantro. Pour limejuice over mixture and mix well.
  • Stir in vinegar and sprinkle with kosher salt. Cover and chill for 45 minutes to 1 hour. Stir before serving.
