Ingredients

1 pound Italian sausage
4 cups frozen hash brown potatoes, thawed
1 cup (4 ounces) shredded cheddar cheese
1 cup frozen cut leaf spinach, thawed and drained
1 (14.5 ounce) can Red Gold® Diced Tomatoes Roasted Garlic & Onion, drained
1 (14.5 ounce) can Redpack® Diced Tomatoes Roasted Garlic & Onion, drained
1 cup (4 ounces) shredded mozzarella cheese
4 eggs
3/4 cup milk
Salt and black pepper to taste
2 tablespoons grated Parmesan cheese

Directions:

  • Preheat oven to 350o F. In a large skillet, cook sausage over medium high heat until browned; drain well. In a mixing bowl combine potatoes and cheddar cheese.
  • In a greased 13X9 inch baking dish, layer half of the potato mixture, RED GOLD® DICED TOMATOES ROASTED GARLIC & ONION, sausage, spinach, remaining potato mixture and mozzarella cheese. In a medium bowl beat eggs; add milk, salt and black pepper. Pour evenly over potatoes.
  • Cover with foil and bake for 1 hour. Uncover; sprinkle with Parmesan cheese and bake an additional 15 minutes, or until knife inserted in center comes out clean. Let stand 5 minutes before cutting into squares for serving.

Cooking Hint:

Fennel seed has a milk anise, or licorice, flavor and is often is used in Italian sausage.
